What are they talking about?

A healthy diet is a healthy diet regardless of goals. You hear us talk about cutting out flour, sugar, rice, and "no more lattes?" What are we thinking! I see the looks of horror on people's faces. It doesn't have to be that way. There are baby steps that you can take so you can be successful. Take that first step. Decide where you want to start. For example, no flour for one week. Don't worry about the rest, just cut out flour completely. Then stick with it. Or, if lattes are your weakness, tell yourself you have to drink black coffee or tea all week and then you get to treat yourself to a latte on Sunday. Once this first step is done, add another to your list. Week two you cut out flour AND sugar. Week three cut out flour, sugar, AND dairy. Do this for 4 weeks and you will start to feel better and be empowered to keep moving forward. Finding accountability is also very important to staying healthy. Joining a nutrition challenge can offer that accountability and plug you in with others who are going through the same learning process as you. Remember, one step at a time, and be better than yesterday!

Here's a great recipe to mix it up!

Cream of Cauliflower Soup

a large head of cauliflower
2-3 stalks celery
1 carrot
2 cloves garlic
1-2 onions
1-2 tsp ground cumin
1/2 tsp pepper
a few sprigs of parsley
1/4 tsp sage (or your favourite blend of herbs; spices)

Chop head of cauliflower (save a handful of tiny florets for a raw
garnish) and put in a soup pot. Chop; add stalks celery, carrot, garlic
and onions. Add spices. Barely cover with water, bring to boil and simmer
until veggies are tender. Blend the contents of the pot and adjust
seasonings to taste. Add a little hot water if the soup is too thick. Serve
garnished with raw florets.
Serving suggestion: Serve with a steak, plus a spinach/lettuce and mushroom
salad garnished with grated carrot and parsley. You can use the same basic
recipe for Cream of Broccoli or Cream of Asparagus Soup. You won't miss the
fact that is no actual cream in the soup, given the thick consistency and
rich flavor of the main veggie.
You can also add chopped, cooked meat for a quick lunch.
